The “Prison Cafeteria” Abashiri, near main island of Hokkaido offers guests the chance to try the food that prisoners still use to eat nowadays in this prison.Probably the ingredients they used are quite higher in quality than those used in their indoor kitchens, but still, the idea is to offer a meal that is quite the same of the one they’re having every seingle day. In Cardiff, UK, there is a restaurant called “The Clink” (that literally means “jail”) and is runned by 30 detainees. The restaurant offers a variety of delicious dishes, created with the collaboration of well-known chefs in the UK, including Antonio Carluccio, king of the homonym chain stores, Italian Michelin starred chef Giorgio Locatelli and many others.

All together they have created some beautiful and delicious dishes to raise funds for the reintegration of prisoners into society, through food and cooking.
Another project that is having a huge success, is the public restaurant in the Medici’s Fortress, Volterra’s prison. In a beautiful breath taking location, this restaurant is again runned out by inmates regularly salaried, under the artistic supervision of the famous food critic Leonardo Romanelli in charge of recruiting chefs who will act as guides to make this experience a thing you’ll never forget.

These restaurants are not just an opportunity to make money, but they born with the precise intention to restore the dignity of prisoners and give them a proper training once released from prison. It is estimated that the detainees who have participated in this type of program of social reintegration, the recurrence rate is below 10%, against 47% of those that come without adequate training to be readmitted into the working world.
