Menemen is one very popular dish of the Turkish breakfast that is made with very few ingredients.
For two people you will need:
- Three ripe tomatoes washed and dried
- A green pepper
- Half white onion
- Two tablespoons of extra virgin olive oil
- Three eggs
- Salt to taste
- Pepper to taste
Preparation
Start to cut the tomatoes, onion and bell pepper into small pieces.
In a fairly large pan, place the oil with the onion cut into small cubes and cook for about 3-4 minutes.
Now add the onion, the pepper into pieces and cook for another five minutes.
Put into the pan the chopped tomatoes, add salt to taste and cook over a low heat, for about ten minutes, stirring occasionally.
When the tomato will be turned into a sauce, it’s time to add the eggs.
With the help of a spoon make three small circles in the pan to ensconce the eggs.
Cook them with the lid for about three or four minutes, depending on how you want your eggs cooked.
If you want the yolk remains liquid enough you can cook them for only three minutes, otherwise if you want it harder, you can cook them a few minutes more.
