Cupcakes are soft delicious mini cakesthat now everyone around the world knows as they have been (and still are) very popular. There are thousands of versions of cupcakes on internet, someone decided to replace even their wedding cakes with a small version of it but made into cupcakes.
They are perfect for a party with children or for a delicious afternoon tea. Today I decided to cook the basic version of them, the basic vanilla cupcakes recipe, that lend themselves very well to a thousand of different variations, depending on your taste.
Here you are the ingredients that you will need to make 12-15 cupcakes:
175 g of softened butter
175g caster sugar
3 large eggs
1 tablespoon vanilla extract
160 g all purpose flour
½ teaspoon baking powder
For the soft frosting
60 g of softened butter
100 g of Philadelphia (or any other cream cheese)
300 g of powdered sugar
3 tablespoons milk or double cream
Preparation
-Turn on the oven to 180 degrees.
-In a large bowl place the butter and sugar and mix well until pale and creamy.
-Add the eggs one at a time and mix well after each egg is added.
-Gradually add the flour and fold it gently.
-Divide the mixture evenly between the paper cases in the cupcake tin and let them cook for 15-20 minutes.
-While the cupcakes are baking, let’s make the the soft frosting: put in a bowl the Philadelphia with the butter and the icing sugar and stir well until you get a thick creamy mixture.
-Add the milk and mix well.
-Let it rest in the fridge for 15-20 minutes. When the cupcakes are ready, take them out of the oven and let them cool very well.
-Take a teaspoon of soft frosting and place it on top of each cupcake, then decorate them with lots of colour sprinkles.
